Colourful, refreshing, no cooking required and quick to prepare Guacamole! Unquestionably delicious and packed with nutrients (carotenoids, vit C, vit E, folate, potassium, monounsaturated fats, diverse plant sterols and fibres) to the brim. Enjoy!
Ingredients (serves one or more – some things are hard to predict...):
2 tomatoes (or 8 cherry tomatoes) 1 red bell pepper 1 ripe avocado 1 red onion a handful of fresh coriander leaves 1 small hot chilly juice of 1/2 lime black pepper and salt to taste
Method: Chop all the vegetables, add the lime juice, pepper and salt and mix
